Ngâm hạt sen vào nước nóng trong 2 giờ hoặc ngâm nước lạnh qua đêm (0,4L nước). Sau đó đem nấu lửa nhỏ đến khi hạt sen mềm, bóp hạt không còn cứng (nếu hạt sen chưa mềm mà nước đã cạn thì cho thêm ít nước nóng). Để nguội khoảng 20 phút. Táo đỏ cắt đôi bỏ hạt, ngâm nước 15 phút sau đó cũng đem nấu đến khi táo mềm thì vớt ra. Đem táo đỏ và hạt sen vào cối xay nhuyễn.
Cho hỗn hợp trên vào chảo chống dính đáy bằng, thêm đường, mạch nha và 1/3 lượng dầu ăn, dùng cây vét trộn đều theo hình xoắn ốc. Sên nhân ở lửa vừa đến khi nhân sệt thì vặn lửa nhỏ để sên. Liên tục vét thành và đáy chảo để nhân không bị khét. Trộn 2/3 phần dầu ăn cùng bột dẻo, bột bắp rồi cho từng muỗng hỗn hợp vào nhân (độ đứng nhân như hình), trộn đều nhân rồi mới cho muỗng tiếp theo đến hết. Sên thêm khoảng 5-10p thì tắt lửa, cho nhân vào thau sạch và bọc kín, để nguội ít nhất 4 tiếng hoặc qua đêm trong tủ lạnh.
Cho bột dẻo và bột trà xanh trộn đều. Trong thố khác dùng phới lồng trộn đều shortening (hoặc dầu ăn), cho vào từng muỗng bột dẻo trộn đến khi sệt. Thay phới lồng bằng phới dẹt, thêm từng muỗng bột dẻo vào trộn đến khi hết bột khô, cho ra bàn nhồi thành khối đồng nhất, bọc kín để bột nghỉ 10 phút.
Chia phần vỏ và nhân thành các phần nặng 25g, vo tròn (tỉ lệ nhân/vỏ = 1:1 hoặc 2:3). Phần vỏ ấn dẹt rộng gấp đôi phần nhân (rìa vỏ ấn dẹt hơn trung tâm), sau đó cho nhân vào bọc kín. Để nghỉ thêm 5p (bọc màng tránh khô mặt)
Sau khi để bột nghỉ, rắc một xíu bột dẻo khô lên mặt bột và khuôn, cho bột vào vừa khuôn rồi nhấn khuôn tạo hình. Lấy cọ quét bớt phần bột thừa. Bánh bọc kín, bảo quản ở nhiệt độ phòng, sau 1 ngày bánh có thể dùng được, ăn ngon nhất trong 1 tuần.
